Lunch - Potato Pancakes, Green Beans with Toasted Almonds and Black Beans Recipe for Potato Pancakes: http://smittenkitchen.com/ 1 Large potato about 1 pound 1 small onion 1 egg 1/4 cup of AP/Unbleached Flour 1 teaspoon of salt 1/4 teaspoon of pepper Peel the potato and then shred it Shred a peeled onion into the potato mix mix the flour, egg, salt and pepper mix the potato and onion mixture with the flour mixture heat a pan and melt butter set about a tablespoon of the mixture on the pan and flatten with the back of a spatula cook for about 1 minute and 45 seconds and then flip (until brown) cook the other side for about 1 minute and then eat :) |
