Breakfast - Yogurt with Granola and Figs

Shrimp taco alone, meal below

Lunch - Beans, Rice and 2 Shrimp Tacos

Dinner - Carrot Soup and Focaccia

The steps for Focaccia are below and can be found here

1/3 cup warm water with a package of yeast, let sit 5 minutes

Add 1 cup of water and

2 tablespoons of olive oil

Mix 4 cups of AP, unbleached flour with 1 teaspoon of salt

Slowly mix the yeast mixture with the flour mix

Flour a working surface

place dough on it

knead for about 5 minutes

Cover for another 45 minutes

once ready, roll it out, I used a surface, did not work well on the baking sheet

then I placed it on the sheet

spread olive oil on the bread

sage and oregano

topped bread with sage, oregano, salt, pepper and sundried tomatoes (bad idea)

sundried tomatoes burned!

I should have folded them with the dough

but, perfect without the sundried tomatoes

Shrimp down below

Seasoned with lemon juice, olive oil, salt, pepper, parsley and a spice blend

cooked with butter until pink

Breakfast - Black tea and Frittata from yesterday
 Dinner - Good ol Spaghetti!
and Salad :)

For lunch, I had fish tacos with beans and rice. I did not have my camera :(

Breakfast - Yogurt with Cinnamon, Honey, Figs and  Homemade Coconut Granola with some Mint Tea

Any type of vegetables will work for a basic frittata

I added about 1/3 cup of milk to 5 eggs

Add to egg mixture, I used about 1/2 teaspoon of paprika and 3/4 teaspoon of cumin - varies per taste,  one can also put  cayenne

Mix all ingredients, and if you have spinach, feel free to add a bit of cheese along with salt and pepper to taste

When eggs settle, top with cheese and send to broiler for about 5-7 minutes until brown on top

I am re-starting the blog with more cooking photos and recipes. Before I stopped, I was ill for about a week and a half from improper acid-base balance. With the help of close friends, I managed to recover quickly and have been doing well since.


Here is a Apple- Spiced Carrot soup. It reminds me of my friend David's carrot puree.
The basic premise is:

1/2 an onion, 1 leek, 1 apple, cored and peeled , 5 carrots, peeled and cut into 1 1/2 inch pieces, 4 cups of vegetable broth, curry powder, chili powder, salt and pepper. I used homemade bouillon for the broth. ( I halved the recipe)

Saute the onion, leek, apple and carrots with 1-2 tablespoons of olive oil and butter, I used about 1 tablespoon of butter and 1/2 a tablespoon or (1 1/2 teaspoons) olive oil for about 5-7 minutes. Add the broth, bring to a boil and let simmer for 30 minutes. Blend it, and then add the spices!
